I've been making this stuffing for a few years now, and it's always a hit. I sub Chorizo for the Andouille and I buy the cornbread to save time. It's a wonderful blend of flavors, I just can't wait till I manage to find the magical amount that will allow me to have some leftover to enjoy later on :P

I saw this on TV several years ago and HAD to try it. I used my husband and sister as the guinea pigs for this recipe and they clammored for more!!! My cousin will, now, only eat this particular dressing. Even if I'm not going to be in attendance, they ask me to make up a batch for them to eat..... LOVE IT!!!

I have made this the last 3 years and everyone just raves about this dish. This is the only time I make my own cornbread, I always add extra cayenne. Also it seems around the holidays andouille sausage is hard to find so I don't mind substituting a good smoked sausage or kielbasa. Fantastic and of course better the next day if you have any left.

Buy the cornbread from the store already made and this dish takes no time at all. It was a huge hit at Christmas dinner.

Love this recipe!!! It has such flavor and not like a typical dressing. I don't like stuffing, but love this one.

    Try it.

I only made the cornbread from this recipe. I typically love any recipe that's from Emeril however this cornbread just wasn't good. I think there's a reason that it's made with a dressing - it has no flavor by itself and is very dry. If you're looking for a cornbread recipe, try another one.

I tried this recipe about 3 years ago and it's the only one I make during the holidays since then. I substitute the andouille with kielbasa and use sweet corn bread. I receive complements every time :-

My family is looking forward to more of the andouille dressing this year.
It was a lot to preppare as far as cutting up the celeryet..but that andouille flavor and cornbread combo was great and well worth the pprep time
