    Recipe was very easy to put together. Flavor of the ingredients worked well together. Recipe did not mention how much sausage to used, so I just used 1 pound.

    I prepared my usual cornbread dressing in addition to this dressing and this was a winner hands down. I had no leftovers, unfortunately, of this dressing. It will be part of our Thanksgiving dinner for now on.

    Recipe includes a basic recipe for Emeril's corn bread.

    Once you enjoy the cornbread, you can use the leftovers for the dressing by reducing the other ingredients within the Andouille Dressing.

    Wow, thas was the response from the family when they got a taste of this stuffing. It is like nothing you will buy in the store in a bag or box. This stuffing has a taste all its own. It does not have too many spices as to overwhelm the flavor of the other food (turkey nor does it have to little as to not enhance the flavor. It went great with turkey and I really do recommend as a side dish.

    I usually never make stuffing because my husband and most of his family do not like stuffing. They were all singing a different tune after this recipe. Even my picky kids loved it. Will make agian next year.

    Made this for TG Dinner and it was a hit. Was definitely worth the effort to find the Andouille sausage (Harris Teeters - I don't think it would have been as good without the New Orleans taste of the sausage. Will make again for Christmas.

    As a portuguese lady I loved it very much so did my family today with our turkey.
    One thing I did changed was I used portuguese conbread from Fall River Mass.it was delicious, Thanks again Emeril you are my Idol as a Chefe.
    I wish some day before I die to see you and tast personal your food, this is my only dream as a 71 years old lady from Portugal Acores. I will be watching you wenever I can because I am still working 3 days a week, but I love your shows. Thanks
