    I was rather disapointed with this recipe. The concept is ok, but cooking (and clean up time didn't justify the outcome.

    I have made this recipe many times as a light meal for later evenings and have never been disappointed. Try replacing the ham with pork or (believe it or not, turkey for a very different flavor. I have used ground croutons and panko instead of the breadcrumbs as well. Enjoy?

    I had always heard that making stuffed artichokes was very difficult. Not true. The stuffing was out of this world and very easy to prepare. The artichoke and stuffing combined were absolutely awesome.

    This was my first time making or eating artichokes (other than jarred artichoke hearts. They were easy to make and we loved them. I had to leave out the parsley and had to use shredded mozzarella instead of parmesan because at the last minute I realized we were out, but it turned out awesome anyway. Squeezing some fresh lemon juice over them right before eating really makes it tasty.
    I highly recommend giving these a try.
