    This is absolutely delicious but yes, very time consuming! However, all TRUE :- Emeril fans know that you don't make his dishes in a hurry. I've tried many, many of his recipes over the years but can't say I'd call them 30-minute meals. I make Emeril's recipes when I have extra time on the weekends and turn to Rachel or Sandra if I need something in a hurry ;- :- I did notice the 12 cups of chips that another reviewer pointed out as well, but figured it was a typo and probably meant 2 cups or 1 1/2 cups. Either way, I just covered the bottom of my dish,crushed with my hands and left it at that. Our whole family enjoyed this dish A LOT. I will definitely make this again some lazy weekend;-

    Very good! And yes, it is very time consuming to make. Would give it 5 stars with these corrections:
    1-Somebody at FN PLEASE fix the typo (and it has GOT to be a typo "12 cups tortilla chips"!!!!!! I used just one bag of tortilla chips (which came to 4 cups and it was still a little too much. 4 cups covered the bottom of the casserole dish about an inch deep and it does expand when baked.
    2-Add more cheese to your taste
    3-Add more seasoning.....although I used Emeril's Southwest Seasoning bottled version instead of the recipe for the seasoning.
    Another recommendation: I took this for a potluck lunch at work with no way to keep it warm (baked it the morning of. It is definitely much better when it is piping hot.

    I made this recipe and it is not worth it.I read this recipe over and over and it is just to many ingredients.
    I am a great cook and I know my way around in the kitchen and what to do with what. I have tried other recipes of Emeril and I fine that he just uses to many ingredients. Some of these spices you will not be able to taste. He has a total of 26 ingredients to make 1 dish. STOP Emeril but I still watch your new show on the cooking channel.

    This recipe had some really good flavors, so I loved the ingredients. I didn't like the consistency of it as you lift it out of the casserole dish. It was kind of just fell all over and wasn't firm, so on the plate it looked like a pile of mess. I would saute the onions before adding them since they were still a little crunchy, and I also think you need the tortilla chips because they are acting as the carb, otherwise it is just chicken, vegetables, and cheese. Maybe rice would be a better substitute? Overall great tasting, just not very appealing on the plate.

    Don't care for tortilla chips used this way, so instead added cooked macaroni. Otherwise, followed the recipe exactly. Mmmmm. Cowboy chicken macaroni and cheese!
