Ingredients

  • 1/4 cup sifted flour, plus 1 tablespoon
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1 cup sugar
  • 1/4 cup milk
  • 1 egg
  • 2 cups fresh cranberries
  • 1/2 teaspoon vanilla
  • 1 cup water

Directions

Preheat oven to 375 degrees. Meanwhile make the filling. In a saucepan place berries. In a bowl mix together 3/4 cup of the sugar and 1 tablespoon of flour and then sprinkle over the berries. Then add the water and vanilla and bring to a boil. Reduce heat just to keep the berries warm. Now make the dumplings: In a large bowl sift together remaining flour, baking powder, nutmeg and salt. Then add the remaining 1/4 cup of sugar. In another bowl mix together the milk and eggs and then add to the dry ingredients until just blended. Pour the mixture into an 8-inch square baking pan. Using a tablespoon, drop the cranberry mixture onto the batter. Place in the oven and bake for 25 to 30 minutes.
