Ingredients
  • 2 pounds fresh spinach, washed and tough stems removed
  • 2 tablespoons unsalted butter
  • 1/2 cup finely chopped shallots
  • 1 teaspoon minced garlic
  • 3/4 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 teaspoon nutmeg
  • 1/2 cup heavy cream
Directions

Bring a pot of salted water to a boil over high heat. Add the spinach and cook for 2 minutes. Drain in a fine mesh strainer, pressing with a large spoon to release as much water as possible. Finely chop and set aside.

Melt the butter in medium saute pan over medium-high heat. Add the shallots and garlic and cook, stirring, until soft and fragrant, about 2 minutes. Add the spinach and cook, stirring, just until the liquid is released. Add the cream, salt, pepper, and nutmeg, and cook until the cream is reduced by half, about 4 minutes. Remove from the heat and serve immediately.

The best creamed spinach I've ever made. The texture was great due to me chopping it rather than using frozen chopped spinach which is all I ever used before now. I used bagged spinach to save time and work since it probably made more than whole spinach bunches once you rip off the leaves, I had to add more cream to get the right consistency and a little more of the spices but still so wonderful. item not reviewed by moderator and published

Well, I didn't have all the ingredients here, so I went with the flow and it's soooo good. This is what I did: 1 pack of frozen spinach (defrosted), 1 whole onion (minced) and 2 garlic cloves (minced), sprinkle of paprika, nutmeg, pepper, and cardamon, substitute of 1 cup of milk and 1/3 melted butter (for heavy cream), 4 teaspoons of flour, and as much as I wanted of blue cheese. Fried the onion and garlic together, added the spices, then the spinach, then the cheese, then the substitution, and finally the flour. Cooked it all like how the recipe above said and voila! :D Try it if you dare a non-chef's going with the flow recipe! ;D since some people said it was missing something... item not reviewed by moderator and published

Made this with Swiss chard. Also subbed 1/2 & 1/2 for the heavy cream. Didn't care for the excess cream in the finished dish and I actually used less to begin with. YUM! I made this for my family on Christmas day. The only addition I made was fresh grated parmesan cheese on top, set in the oven after I turned off the oven when the turkey was done and let it sit in the warm oven for just a few minutes while I finished up the other dishes. This is a great dish!! I've been craving spinach like crazy with my 3rd pregnancy and I wanted to try something different, I'm so glad I found this!! I did substitute fat free half and half for the cream and used red onions instead of the shallots, just because I didn't have any in the pantry. Halfway through preparing this I found out a couple of my guests weren't fans of creamed spinach at all. After tasting this they remarked on how it didn't turn into some kind of slimy mush and changed their minds about creamed spinach altogether! Most of the cream was absorbed and didn't look at all like the picture above, but it was tasty nonetheless. Loved this! A lighter alternative to the rue based recipes which I find pasty. I didn't try any of the alternatives suggested because it's just wonderful as it is. However, I did substitute half and half for the heavy cream. And, I added the raw chopped spinach at the very end and tossed it until it just turned soft. Really like the recipe. My husband who rarely eats greens loves it. I'd just like to add a twist for readers since I've tried variations. The follow are "or" 1. add a 1/3 of a block of cream cheese (and less cream)--low fat will do--very creamy and cheesy. or 2. add honey (about a tablespoon)and a sprinkling of almonds. 3. around holiday time, add "pumpkin spice" (instead of just nutmeg). I didn't have shallots, so I used red onions that I pre-cut and froze (tired of having them rot before I get to use them). My 12 yr old daughter took a look in the pot and said she didn't like them stringy, and suggested that I puree them. I tossed the pot of spinach into a blender and pulsed a few times. The first time I tried creamed spinach was from a frozen box. The second time was from this recipe and it was actually quite good and super EASY. I never liked cooked spinach but I am making an exception for this side dish. My 2-year-old devoured it. FYI, I didn't have cream so I after the shallots/garlic were done, I added a bit of olive oil, sprinkled with some flour then added milk, stirred until thickened/creamy. I used shallots the first time I made this recipe and organic yellow onions the second time; both times it was delicious! I think shallots gave the recipe a slightly more complex and satisfying taste for me. Instead of normal spinach that needed the stems to be trimmed, I used 1.5 lbs of organic baby spinach.
