Thank you so much! This was fantastic - even my 16 month old was devouring it! I didn't have nutmeg on hand so just substituted with some ground cinnamon and ground cloves. I too cheated with frozen spinach to start. Thanks again!!! (Also - it is great mixed into Rachel Ray's recipe here on Food Network - chicken, sun-dried tomatoes, feta and spinach in phyllo cups - yum!

I used shallots the first time I made this recipe and organic yellow onions the second time; both times it was delicious! I think shallots gave the recipe a slightly more complex and satisfying taste for me. Instead of normal spinach that needed the stems to be trimmed, I used 1.5 lbs of organic baby spinach. Overall, I really enjoy this recipe.

I was looking for a good spinach side dish and I think this is going to be one of my favorites! Very easy to make and tastes delicious. I did put nutmeg in it, but not as much as it calls for and it was awesome! Thumbs up Emeril!

To start with i used frozen spinach instead of fresh left out the nutmeg and shallots and added a few tablespoons of cream cheese. WOW! this was delicious.

I kicked it up a little, I am not a huge nutmeg fan,so I left it out and added some essence,we all loved it.

This was a simple and easy way to add a little variety to our veggies. I put my own touch on it by adding a bit of chili powder. Husband and I loved it.

Our family is a bit health conscious, so I substituted 1% milk for the cream and it still turned out very nice and full of flavor. I will definitely make this again.

This recipe was great I added 1/2cup grated parmesean reggiano. It was quick and very tasty - will never buy frozen creamed spinach again...
