Ingredients

Directions

Mix light brown sugar, granulated sugar, heavy cream, butter, water and salt in a heavy-bottomed saucepan. Cook over low heat, stirring constantly with a wooden spoon, until sugar dissolves. Stir in pecans and cook over medium heat until mixture reaches the soft ball stage, 238 to 240 degrees F on a candy thermometer. If you spoon a drop of boiling syrup into a cup of ice water, it will form a soft ball that flattens easily between your fingers.

Remove pan from heat and stir rapidly until mixture thickens. Drop pralines by the spoonfuls, 1-inch apart onto parchment paper-lined baking sheets. Let cool completely until firm. Store in an airtight container.

This really is an authentic recipe. My grandmother made them her entire life and a couple of months ago I was in new Orleans and walked into a local candy shop in the quarter, Although I have never been a big praline fan, I tried one and was hooked. Upon returning to Utah I ordered lbs of them, and of course they did not last, I just knew I was going to have to learn to make them, because I was not going to continue to have them shipped. I found emerils recipe and tried it, took me about 6 times to get it right, although its slightly different each time it was fabulous. Simple ingredients quick to make and delicious! Thanks.

Followed the recipe to the letter.... ...I thought the flavor was very good, but the texture was a bit grainy. I think a little corn syrup (1 or 2 T would correct the graininess. They set up very rapidly so spoon them out quickly. I'll try again with the adjustment. My husband thought they were fabulous!!!
