This really is an authentic recipe. My grandmother made them her entire life and a couple of months ago I was in new Orleans and walked into a local candy shop in the quarter, Although I have never been a big praline fan, I tried one and was hooked. Upon returning to Utah I ordered lbs of them, and of course they did not last, I just knew I was going to have to learn to make them, because I was not going to continue to have them shipped. I found emerils recipe and tried it, took me about 6 times to get it right, although its slightly different each time it was fabulous. Simple ingredients quick to make and delicious! Thanks.

Followed the recipe to the letter.... ...I thought the flavor was very good, but the texture was a bit grainy. I think a little corn syrup (1 or 2 T would correct the graininess. They set up very rapidly so spoon them out quickly. I'll try again with the adjustment. My husband thought they were fabulous!!!

I made several batches of these. The texture of the pralines and the taste is awesome! Instead of just adding the pecans, I toasted them first to add more flavor. I also did one batch w/ maple flavor added instead of water. When the pralines start to harden up, I just added a little hot water to soften them up again. Got LOTS of compliments on these! GREAT RECIPE!
