    I made this complete recipe last weekend for my husbands associates. I made it as written clear down to the homemade applesauce. VERY tasty!! Finding the Merliton's was no easy task...asking a produce guy won't help either. They looked at me like I were crazy. Thanks to Google, I found out that they were simply Chayote squash. Again, not that easy to find. My crown pork roast was, unfortunately, the ugliest one that I have ever ordered (Whole Foods...very disappointed. I ended up just cutting it up to serve it so a crown isn't completely necessary for this recipe. I would use a regular pork roast with bones next time. The stuffing was fabulous...especially when you took a bite of the stuffing with the applesauce. I also took the drippings in the bottom of the pan and drizzled that over the meat. VERY simple roast...the fixings take some time but it is not hard. Emeril is my go to guy for entertaining. His recipes have NEVER failed to please.

    This is the best recipe for a Crown Pork Roast and so easy. The pork was moist with a wonderful flavor. Highly recommend it for Christmas. Stress Free and Impressive.

    This is the first time I am making a Crown Pork Roast and it is by far the best pork cut I have prepared. It was very juicy and full of flavor. The whole family enjoyed it including the dog. Stuffing was quite delicious as well. We will make again and not change a thing.Merliton is the same as Chayote and you can easily find it in Mexican grocery stores.

    I've made Crown Roast of Pork several times and was looking for a change on the rub. Emeril is my "go to" guy for recipes. It came out flavorful and juicy! Will definitely use this again, not only for the Crown Roast, but for pork roasts in general!

    I made this recipe last Christmas and it was my first time cooking this really expensive piece of meat so i search all day for the right recipe and found that you can always count on Emeril to give a good recipe. I had trouble finding a merliton in my area so i just used mushrooms and sausage stuffing and still came out great. Making this one again this Christmas. The family loves it and I look like the best cook ever.

    I plan on making this for Christmas dinner. Just want to know: do you add the wine to the roasting pan while cooking? For all those who have made it before please let me know. I rated it already because I couldn't leave it blank. But I take everyone's word for it that it deserves 5 stars.

    I am an experienced, but traditional cook, so had never made a crown roast before. I decided to try this recipe for Christmas last year, and it was fantastic! I made it again at Easter and plan to make it again this Christmas! I use a different stuffing recipe -- also an Emeril recipe from this website. Can't rate this roast receipe high enough. It is simple enough that even the most inexperienced cook should be able to make it. Lot's of "WOW" factor but simple to execute!

    This recipe is fantastic! Having never cooked a pork of this type before, I found the directions to be very easy to follow. Best of all, it turned out fabulous!
