    This soup is wonderful! The aroma of the currry had everyone in the house coming into the kitchen to see what I was making. The soup is very light and tasty and quite filling as well. A definite keeper!

    Thanks Emeril. My husband is having gum surgery and he has to eat soft food. I had some zuchinni in the frig and thought he would like this. He did. It was filling and easy to
    make and I had a chance to use my boat motor.

    I made this for lunch one day and was quite happy with it. Very nice texture and aroma. The next day I tried it cold out of the fridge and found it to be quite refreshing, although I must say I prefered it hot. I didn't have veggie stock so I just used water and I used fat free 50/50 instead of cream and it was still great!

    This soup is fabulous! I substituted chicken broth for the vegetable broth since that was all I had on hand! The taste is excellent! I will be making this again and again and again!!
