While this recipe was relatively easy to make, I was very disappointed in the results. After refrigerating, the dough is too firm to roll out without it cracking, so you have to wait for it to warm back up. I have never had sugar cookies stick to the baking sheet, but these did, and half of them ended up breaking while trying to get them off. The lemon zest is completely useless and gives no flavor. I gave this two stars because the cookies do taste alright (the ones that survived, but are nothing spectacular and NOT worth this kind of trouble. The icing is a standard royal icing.

This is a super easy, great recipe! My 12 yr old student and I made 2 batches for Christmas this year and they turned out fantastic! The royal icing recipe that follows is a winner too! Remember to add the lemon zest because it gives these cookies a wonderful citrus flavor. Simple, fun, and perfect for the kids. One batch only makes about 25 cookies however, not 5 doazen as it says, so be aware. I doubled it.
