I found this recipe early last fall and have made it several times. The crust is beyond compare... buttery, rich and flakey. Sauteing the apples before filling the pie is an excellent step and ensures that you'll not get any tough bites. I'd not baked a single pie before trying this recipe and have gotten rave review after review from family and friends. The ingredients are very inexpensive and the recipe is simple. The peeling of the apples is what takes time.
I did leave out the pecans and the cheese. I also used a ceramic deep pie dish which I made two batches of dough to cover. The first time I made it I used 1/2 Granny Smith ad 1/2 Macintosh. I found that the Macintosh were too tart and now use only Granny Smith. It's fall once more and I've already gotten a request for Emeril's Apple Pie... I'm baking one tonight to go with Tyler's Ultimate Beef Stew for Sunday dinner tomorrow.

I highly recommend this recipe, which is very forgiving, and extremely amazing in terms of flavor and texture. I did not find it that difficult to pull off.
I made a regular size pie (as I did not have not deep dish, and the amount of dough was just right.
Also, I left off the cheese (and served wedges on the side instead and it baked perfectly.
Excellent recipe!

This pie was pretty easy to make, and my kids really enjoyed helping me. I did a pre run for this Thanksgiving, and my son could not stop saying "I am going to eat the whole pie myself!" and he is really picky with his food! It is delicious, I will make it again, and again for whenever I want a apple pie! Thank you! :

This is the best apple pie ever. The filling is perfect. The only thing I changed was I used my own all-butter crust recipe because I quit cooking with hydrogenated oils. Plus an all-butter crust tastes much better. And don't skip the cheese! I have been eating apple pie with cheddar cheese forever and my husband thought I was crazy. I made him try it and now he only eats his apple pie with cheese.

This was my very first pie, and it came out beautifully. The crust was flaky, tender and buttery. The apples were gooey and delicious. I made extra filling just to eat alone because it was so good. My only qualm was that I didn't have enough pie crust-- and I didn't even make a deep dish pie. If the crust recipe were a little larger this recipe would be perfect!
