this is super yummy..didn't have tomatoes so used a can of italian spiced diced tomatoes and no white wine so used japanese sake..omg..super super good

I was out of several of the ingredients, but was still able to make it work with substitutions. Delicious!
Can't wait to try it the way it was meant to be.
This was an excellent dish that my entire family enjoyed, (teens included. I substituted dinner rolls (which I cut in half and toasted on both sides for the sandwich bread.
I substituted miso soup for the broth. I had no shallots and did not substitute for them. I had no tomato paste or fresh tomatoes. I used 21/2 cups canned diced tomatoes and 1/2 cup tomato sauce instead. I also left off the parsley garnish.
Additionally, I never have white wine and so I substituted a Cabernet.
Did I mention, delicious??

Oh my goodness! This chicken was awesome! I just made this tonight and I cant believe how delicious this was! This is a must try recipe! The presentation was very cool too!

All the flavors were excellent together. The toast turned a little mushy with the sauce, so I crumbled the rest of the toast and used much more for the 'garnish' instead of putting the toast on the bottom. We loved this!

I tasted really good, but the spices are very subtle. I like things that are more bold, and while this tasted good, it was a little too subtle for my tastes. When I prepare it again, I will use twice the garlic and at least twice the Herbes de Provence.
My family liked it the way it is. The sauce alone would be great mixed with rice or egg noodles.

We sauteed the chicken breasts and used diced, canned tomatoes, (since fresh are no longer available in our area. We also served over mashed potatoes instead of toast. It was excellent and we will definately make again for a dinner party!
