Everything about this dish is delicious......... I prefer bone in pork chops about 1 inch thick. my gravy came out to thick however, it was seasoned perfectly. The sweet potato's immaculate....

I liked the pork chops and the sweet potatoes; however, the gravy was very bland. Instead of the gravy, i think I will make a gravy out of the pan drippings iinstead.

I made the pork chop recipe from Rachel Ray with rosemary, fennel and orange zest but I used the caramelized onion gravy from Emeril (and the rum raisin sauce from Rachel for our Thursday night family dinner (12 people. People could choose between the two sauces and Emeril's onion gravy was a smashing success, none leftover even though I doubled it. Don't get me wrong, the butter rum raisin sauce was good too but it's not for everyone. I also made the caramelized sweet potatoes and pecans and they too were a great success. They were more like eating a dessert then a potatoe :- I will probably make them for the holidays instead of traditional sweet potatoes with marshmallow. Both recipes were very easy to follow and very good. Everyone enjoyed the meal.

Everyone loved it. Will definately make again. Used 1/2 of the sugar and butter called for in the sweet potatoes after reading reviews and it was perfect.

I thought this recipe was great. I didn't make the sweet potatoes just the pork & gravy. Also left out the cognac because I didn't have any. I will make again.

The sauce really made these pork chops go from ordinary to delicous. My husband loved the pork chops and I am sure I will be asked to make this again.

It is very good. The pork chops came out very moist and tender. The key part of the meal is the onion gravy: subtle and sweet. A great combination, and the gravy is just a good complement to the pork chops. I didn't make the sweet potatoes though.

Delicious! Next time though, I'll eliminate the brown sugar from the sweet potatoes (SO sweet; didn't need them, and be sure to use chopped pecans for cooking the sweet potatoes (I used pecan halves because it didn't specify, and they were good but didn't really stick to the sweet potatoes. Great recipe and very easy :

I prepared this recipe and had rave reviews. The pork chops came out tender and very tasty. It was the caramelized onion gravy, however, that was the biggest hit. I will use this gravy for steaks, roasts, maybe even roasted chicken. It is absolutely wonderful. Give it a try. Do yourself a favor, in case you haven't already, and by or make some Essence. Like Emeril, you will probably wind up using it on everything but ice cream.

I skipped the sweet potatoes and made mashed potatoes, instead. Steamed green beans went well with the rich chops, gravy and potatoes.
