    So yummy. It melts in your mouth. Anyone who like eggplant should try this easy dish.

    this reminded me of an eggplant stuffing. i would not use as much bread crumbs. dry. actually would make an ideal vegan thanksgiving stuffing.

    Great flavor. I used whipping cream instead of heavy cream. I might add mushrooms next time.

    Love this dish, kids had no clue what they ate until their plates were cleared. I am not the best cook but I try, something I do while cooking is rush everything. If you are like me you have to slow down when making this dish you have to make sure that your veggies are cooked all they way through. Just an FYI! But hey this casserole was simple and easy and quick.

    I made this for a party, because we had one vegetarian going so i only made a little. OMG everyone that had some loved it and wanted more those who didn't get to have any begged me to make it again so that they too could try what all the rave was about.

    My family loved it and eggplant is not generally their favorite vegetable. The casserole is simple but so "comfort" food style yummy and homey. I also followed the recommendations for a reduction in breadcrumbs (I actually used panko and 1% milk which worked just fine. This will be served again very soon!

    used skim milk instead of cream & panko bread crumbs. Plus added in some cannelloni beans. awesome!

    Fixed this casserole for a side dish for dinner. My husband said it was incredible! Our college age son said if the casserole was baseball, it would be a home run!! This recipe is a definite keeper!!
