    This eggplant stuffing reminds me of the stuffing my grandma from New Orleans made for the holidays.... yummmmmmm

    This recipe was excellent. I made it for Easter and it was a hit! It was so easy to make and it was delicious. Everyone loved it. It was a wonderful way to prepare eggplant.

    awesome if you love eggplant (my husband & myself. Really good if you don't (our kids. We double the recipe now and use left over bread for the bread crumbs.
