    take this and add a salad and garlic bread. Some beautiful candlelight and soft music. Plus your significant other and you are bound to get Lucky:.

    I've been making this for years and the whole family loves it, even the 4 and 5 yr olds!
    I double the eggplant and get hubby to grill it, brushed with oil. (In a skillet it seems to always need more oil and quickly gets very greasy. He loves the dish and this way it cuts MY cooking time and we make it more often.
    I also double the pasta. When I can I use half sweet, half hot sausage.

    I LOVE this recipe! It takes a liitle effort, but it is well worth it. All in all, it's easy to make adn I guarantee that this dish will quickly become a family and friends favourite (as it did in my circle!

    I've had my eye on this recipe for a while, and finally decided to give it a try. Wow! So much flavor - it's outstanding! I love how the little bit of nutmeg really compliments the sausage. I followed the recipe exactly, except I grilled the eggplant instead of frying them. I also used both spicy and mild italian sausage which gave the dish a little kick. I will definitely be making this one again!

    Tasted much better on the second and third day. We will definately make it again. For best results would highly recommend a good quality authentic Italian sausage.

    You have to try this. And than, you will make it again. This was deliceous. Do not substitue anything, because the recipe is perfect. I read reviews, and just a note on preparation time... it is worth every minute that it takes to prepare. I did cook it only for 35 minutes, and I would recommend deeper or wider dish. Perfecto Emeril :

    Wasn't sure this going to make the baked ziti I was used to. So glad I took a chance, this is a really delicious tasty dish. Easy, had ingredients on hand, and tasted even better the next day.
