    This receipe is sure to please with slight modification. I recommend 1/2 lb sausage and 1/2 lb ground beef. Either that or cut back on the amount of salt you use. The cream ties the recipe together quite nicely.....just a little too salty for my taste. Check the total time as this is NOT a recipe for the weekday!

    This is excellent. All guests loved it and agreed that even someone who claims to dislike eggplant would probably also enjoy it and if you didn't mention might not realize that the eggplant was in there. This is not a quick and easy but well worth the effort.

    EVERY TIME I HAVE MADE THIS IT IS GONE IN MINUTES. NEVER ANY LEFTOVERS. WELL WORTH EVERY MINUTE OF PREP!!!

    Very, very tasty. I used fresh mozzarella, diced and could've used more eggplant. Excellent! Will make again, it's a keeper!

    This recipe didn't take as long to prep as I imagined, and it was well worth every minute! I especially like how the white sauce topped it all off! Excellent!

    I prebaked the eggplant slices(along with some garlic cloves, red peppers (for the garlic bread and salad to accompany, the olive/tomato sauce is great, the white sauce only takes a few minutes. I had it ready to go in the oven before my company came!

    My husband LOVES this dish! I have been making it for several years now and it never fails to please. I have made it for my family, I have made it for a crowd, I have made it for parties. I make it all year round. Even people who say that they don't like eggplant really enjoy this dish. It takes some effort but it is well worth it. The recipe is perfect as it is written. It is definitely one of the staples in my kitchen. Thanks, Emeril!
