Well didn't have any English Muffins so I toasted two Slices Multi-Grain Bread. What the heck had to "B" Heart-Healthy right. Though the recipe is labor intensive, I think the next time I'll opt for some prepared Hollandaise Sauce. I "paneed" my breaded Gulf Oysters in the same pan I fried the thick-sliced bacon and sauted the diced ham with some Chipotle Tabasco in, adding a tablespoon of EVOO. I've tried in the past to poach eggs, this time they came out perfect. I guess the trick is to use a smaller pan and 2-4 cups of water. I used a smaller sauce pan w/simmering water topped with a bowl just a bit bigger and made the Hollandaise, but instead of butter I used "I Can't Believe It's Not Butter," and used 1/2 tsp of water, as margarine has water in it. Plated everything according to Chef and topped w/ chopped Gr. Onion and a dash of "Bayou Blast." It's an over the top recipe. Can't wait 'til September, when I can make it for our 35th anniversay.

I made this breakfast exactly as Emeril did on his show and let me tell you it was AWESOME!. My wife and I have this at least once a month now with mimosas to top it off....
