I substituted Italian sausage for the ground pork for more flavor in the meatballs. (Just cut the casing off two sausages. Also used plain old "Italian seasoning" instead of Emeril's Italian Essence which my store didn't carry, and small penne instead of the ditalini pasta (don't know what that is. I also skipped the fresh basil leaves. I do think that I'll add some fresh spinach next time. I served this with bread and salad for my book club and everyone loved it.

My boyfriend and I made this soup yesterday and loved it. It wasn't difficult to make at all, so don't be scared of the "intermediate" level rating. My boyfriend loves spinach so he added an entire bag (pre-washed, located in the refridgerated produce department of it and was SO happy he did. We both agreed the meatballs were easy to make and would taste great in a pasta dish as well. Enjoy this soup and make it with someone, you'll be glad you did.

I had some meatballs left over from another recipe so i used these and the recipe was so easy to make. My husband, not a big soup fan ate two helpings and asked for it for lunch the next day. That means something. I like the idea of adding spinach. I'll try that next time as I think it will be a nice addition. I used small egg noodles as this was the pasta I had on hand and it worked well.

Terrific recipe! We also add spinach at the end - because we love it. Thinking about trying kale in the future. Makes great leftovers!!

The soup alone is absolutely wonderful. We have also made the meatballs and fixed with spaghetti. The meatballs are very easy to prepare and will even keep frozen.

This soup was good and I will make it again. I would have liked it a bit more with either extra pasta or perhaps a larger pasta (like an egg noodle instead of the small pasta. I did not have Emeril's Italian Essence in my pantry, so I used regular italian seasoning as a subsitute. Not sure if they are the same and interchangeable or not, but my meatballs tasted very italian...Next time I will buy Emeril's Essence or cut the italian seasoning in half.
