    This soup is delicious and relatively easy. Emeril knows just the right ingredients to make even a simple soup taste like gourmet fare. I used baby spinach as he did on his show instead of the pasta. Additionally, on the show, he put the meatballs in the oven to brown them, and that was easier than doing it in the pan. Make sure to add 2-3 cups of water. The recipe doesn't specify that in the ingredient list, but does in the directions. I will definitely make this again.

    this soup was fantastic. it really tasted like something you would order in a restaurant. my husband loved it as well. wonderful recipie everyone try it. very easy, affordable, and oh so good!!

    This took some time, but it was worth it. I put the left overs in the fridge and the next day, I removed the fat from the top. It was even better the second day.

    This soup was enjoyed by everyone in my family, including our picky toddler! We had leftovers the next day, and I have to admit the soup (like many recipes tasted even better. I did cook it a bit longer then Emeril suggested, causing the soup to get really thick and develop a more intense flavor. Everyone was fighting over the meatballs, while mom sopped up the broth with some Italian bread.

    Great recipe! Soup has a little bit of "kick" to it! Very tasty and a bit spicy, but not overly so! Will make this again and again. Thanks, Emeril!
