    These were the best ribs I ever made and better than some I've had at a restaurant. After reading some of the reviews I decided to not only cut back on the salt in the basic rub, I also didn't add the additional salt and pepper called for in the recipe. After they baked for 3 hours I unwrapped them and brushed some BBQ sauce on. I put them back in the oven for another half hour uncovered and it was perfection! A super easy rib recipe that really impressed my husband! Thanks Emeril!!

    These ribs ROCK. I used to make ours on the charcoal grill, and swore by it. These are so tender and delicious. Plus, we don't have to go out in the cold to have awesome ribs in the Wisconsin winters!

    Great rib recipe AS MODIFIED. After reading the reviews of this recipe I eliminated ALL of the salt required and cut the herb spices in one-half. I sprinkled the raw ribs with kosher salt similar to the amount I would use to grill a steak and then added one-half of the rub. Three hours in a 300 degree oven was a bit too long -- there was no substanceleft to the ribs although they were delicous. Would try 2 hours next time and check for doneness!

    This was so so so BAD... just WASTED good ribs
    So spicy that it was impossible to eat
    My family had to eat corn for dinner....

    I have made these several times - very good every time! I do cut the clear layer of top skin off the one side of the ribs first - I think it is called "membrane". My grocery store has beef ribs on sale often and now I know how to make them!

    These were YuMMy!!!! I made the rustic rub because I had all the seasoning on hand so I didn't use the additional salt and pepper this recipe called for. Didn't need it plenty in the rub. I also seasoned the ribs and wrapped them the night before. These ribs were delicious......and fall of the bone. Yum!

    loved it! took the 3 hours but well worth the time considering there was very little left! We left out a few of the spices on the rub cause we don't do anything hot but either way, recipes works great and it's a great meal!!

    Very, very good. Tender and juicy ribs. But DO NOT use the salt that's called for in this recipe. It's not necessary.

    As usual, Emeril does not disappoint. Followed recipe and cooking times exactly - nothing should be changed. Delicious and easy. Man knows his pork! Thanks for a great recipe.
