It sounds good. I am just wondering when you put the ribs back to the oven after applying the BBQ sauce, do you still cover tightly with the foil or leave it open during the last 20 minutes?

These ribs were very easy to make. I live in a condo where you can't bbq or grill so these ribs were a great substitute. Followed the recipe exactly.

I think the people who say it is too spicy aren't reading the recipe right. You don't use all the rub you make. The recipe for the rub makes more then the 6 Tbls needed for the recipe. Don't put is all on the ribs, that would be WAY too much!

Let me start by saying I am a HUGE Emeril fan.
Every time I go to Miami, we always have at least one meal at his place.
    My fav.

So excited to make this for 4th of July.
Followed directions to the letter...( also I love my food with heat!
    This was a big disappointment.
So spicy that it was almost inedible.
My family ate sandwiches for dinner...ugh.

The ribs were tender so maybe with an adjustment of spices/ and or amount.
We will be moving on to other recipes for ribs..sorry E.
    Better luck next time.

    Emeril:

I served, among other things at our family reunion, your oven baked ribs with your rustic rub. Wow, what a hit they were. I kept getting feed back all day as to how much people enjoyed them.

Going to a party tonight and was requested to bring my home-cooked ribs...wow, what a compliment. Alright, I didn't take sole credit as I was tempted to do. I did give credit to the 'master'......that's you Emeril.

Thanks for your proven, tried and tested recipes.

    Best regards,

I was looking for a recipe that I could use that didn't require hours of cooking on the grill and without pare boiling. I came across this recipe. I have a brine that I use when doing ribs that is an overnight liquid. It uses some of the rustic rub that is in this receipe. I followed the recipe after marinating the ribs overnight and finished the ribs on the grill for 20 mins instead of the oven. I was able to have that outside grill flavor along with the tender meat (falling off the bone and the barbeque taste that I love in 1/2 the time. Thanks for the convenience of having homecooked barbeque ribs anytime.

This recipe is a keeper for sure! I used Emeril's Orginial Essence because I didn't have all the spices to make the Rustic Rub and it turned out great! I also used a different BBQ sauce. The meat was falling off the bones! I will cook ribs using this recipe again and again!

I made these ribs and nobody ate them they all said it was too spicy. Did I read the recipe correctly, tablespoons of salt and pepper or was it supposed to be teaspoons/
