I did not veal and pork so just used ground round and it turned out exceptionally well. Used dried spices cause I didn't have fresh. Didn't have shallots so omitted them. Used half and rather than heavy cream in meat and potatoes. The gravy was out of this world and a perfect accompaniment for the best salisbury steaks I've ever tasted.

I would have given this 5 stars for its flavor if it hadn't been so TERRIBLY LABOR INTENSIVE! (Hubby is still raving about the gravy. I couldn't cut my raw bacon into 1/2" pieces (next time I'll use the chopped, formed stuff and partially freeze it first. No ground veal in this town, so I subbed ground turkey. Subbed 1/4 tsp. each of dried thyme and rosemary for the fresh. Increased the flour to 1/4 cup, and, at the very end, omitted the butter and used 1 Tbs. of dried chopped chives. Even though I had made a simpler garlic mashed potato recipe in advance (that I only had to re-heat, it took me 2-1/2 hrs. to get dinner on the table. (Of course, I was starting everything, except the potatoes, from scratch, and I do wash up measuring cups, spoons, etc. as I go along. I also made a small green salad. This was DELICIOUS!!!
