This is the best beef stew that I have ever made, and I have made a few! Great if you are looking for a good dinner on a cold winter day, need a Sunday dinner idea, or want to dig into a great comfort food! Way to go Emeril! You are the best!

All in all this one hits that mark set aside just for stews. I liked the hint of heat from the cayenne but might of appreciated a shot of red wine in the pot somewhere along the way. Maybe next time.
I did mine over the egg noodles and thought the whole thing came together pretty well. I used some of the remaining tenderloin I got from CostCo which cut the cook time down to about a hour start to finish. (They sell them whole, butcher it yourself and save some dough. (and make this stew!
Caveat: I omitted the potatoes.

I made this beef stew last night and it was great. I had to let mine simmer for 2.5 hours to get the beef very tender. I went ahead and added a full 6 ounce can of tomato paste.
This is now my go-to beef stew recipe.

I recently began watching your show on TV and this morning, while wondering what I was going to do with a 3 lb chuck roast...the Food Network aired Emeril's Comfort Foods which showcased a delicious beef chuck stew...which I proceeded to make for dinner tonight and what a hit!!! Thank you for such a great idea with many of the ingredients on hand...I especially appreciate your recipe for Essence...which, btw, I had already in my cupboard...
