I really liked this salad. Nice twist on a classic. However, the onion didn't work for me. Perhaps a tablespoon or two of green onion would have been good. Perhaps it was my onion, I would make sure to use a sweet onion or rinse the the onion in the future. I didn't think rinsing a grated onion made any sense. The combo of grapes with the blue cheese was great. I'll make again. Thanks

Excellent, my family loves this recipe. Substituted shallot for onion.

I'm not a huge of Waldorf but absolutely loved this. I was going to make it for Thanksgiving dinner but did not have time, so I made it a few days later with dinner. Hubs and I both loved it....making it again this week!

I love blue cheese & Emeril's recipes, but this was not for me. The blue cheese was a little too much zest and over powering in the salad. Nobody ate it, including me.

I had just received an order of Maytag Blue Cheese and tried this recipe for a New Year's Eve Dinner. EVERYONE loved it! I used nice, rosy Gala Apples, polished to within an inch of their lives. I made the dresssing early in the day and mixed the apples in . I prepared the grapes, celery and walnuts in separate containers so quickly combine them at the last minute. The apples, coated in the buttermilk/vinegar mixture, stayed firm and white as can be and the salad was crisp and perfect for a late dinner. I've made it many times now with never a disappointment. This is my favourite Emeril recipe.

Made this yesterday as part of our Thanksgiving Buffet. Our family have long been fans of the traditional Waldorf Salad and we love good blue cheese.
I made it with Gorgonzola which compliments the walnuts. It was amazing.
Kick it up the next day by adding some of your chopped up leftover turkey.
If you like blue cheese and are a fan of waldorf salad please give this recipe a try. It will be on our menu again next year.

I made this for my family and I don't know if somehow I did something wrong, but lets just say, it was not a hit. I made the dressing pretty early in the day, so I might suggest making it just before you are going to eat. We weren't impressed with this one. Sorry Emeril.
