Ingredients

  • 2 tablespoons vegetable oil
  • 2 cups chopped onions
  • Salt
  • Cayenne
  • 2 pounds stew meat
  • 1 tablespoon chili powder
  • 2 teaspoons ground cumin
  • Crushed red pepper
  • 2 teaspoons dried oregano
  • 2 tablespoons chopped garlic
  • 3 cups crushed tomatoes
  • 1/4 cup tomato paste
  • 2 cups beef stock
  • 1 cup canned dark red kidney beans
  • 2 tablespoons masa flour
  • 4 tablespoons water
  • 1 bag Tortilla Chips
  • 1 1/2 cups grated Monterey Jack cheese
  • 6 tablespoons sour cream
  • 1 small jar of jalapenos

Directions

In a large saucepan, heat the vegetable oil. When the oil is hot, add the onions and saute for 3 to 5 minutes, or until the vegetables start to wilt. Season with salt and cayenne. Stir in the stew meat, chili powder, cumin, crushed red pepper, and oregano. Brown the meat for 5 to 6 minutes. Stir in the garlic, tomatoes, tomato paste, beef stock, and beans. Bring the liquid up to a boil and reduce to a simmer. Simmer the liquid, uncovered for 1 hour, stirring occasionally, or until the beef is tender. Skim off the fat occasionally. Mix the masa and water together. Slowly stir in the masa slurry and continue to cook for 30 minutes. Reseason with salt and cayenne. Place a handful of the chips in each shallow bowl. Spoon the chili over the chips. Garnish with the grated cheese, sour cream and jalapenos.

    Ok and Easy

Rated: 3 stars out of 5
I enjoyed the chili, but it was not as flavorful as I expected. I did not add the cheese and sour cream as I was trying to... cut the calorie level and I used canned tomatoes not fresh but do not believe that would have made a big difference. NOTE: there is another version of this recipe on this site which calls for 8 cups of broth. That would be way too much.Read more

    So Good!

Rated: 5 stars out of 5
This recipe is not only SUPER easy but it is so delicious! I made it with 1lb. stew meat and 1lb. ground sirloin, to give it... a different texture and loved it, I also added a little brown sugar, garlic powder, and jalapenos while cooking. This is a great recipe for your average chili lover, not too spicy just right. Thanks Emeril! My go to chili recipe now!Read more

    Great Recipe

Rated: 5 stars out of 5
The taste was awesome - I agree with one writer that it was more like a soup than chili. I used fresh tomatoes and crushed... them and was wondering if that was the reason. I also added a pound of hamburg with the 3 lbs of stew meat. I think next time I would add a couple of more beans and maybe try with corn. The tortilla chips on the bottom was great and the dap on sour cream on top of the chesse was OUT OF THIS WORLD. My Dad was over and said this was the best chili he ever had. Also, I did this in my crockpot and just added the beans at the last minute so they would not get mushy.Read more

    Good chilli

Rated: 4 stars out of 5
The chili tasted great and was pretty easy to make, but it was more of a soup than actual chili. Anyone else have that issue... or did I mess something up somehow?Read more

The taste didn't really justify the dish, not bad, just not great.
