    The best clam chowder I've ever had. Never made chowder before and I'm so happy my first time is with this recipe. Made it with canned clams, which I kind of like the chewy texture of, but next time I will go for fresh and compare. This is one of those recipes that exceeds expectations.

    This is the forth year of preparing this recipe for our big weekend family Christmas gathering at our house and then again for our annual New Years Eve gathering of friends
    ! I make the recipe as is and this year I am making 4 batches and I always make another soup ,this one gets the 5 stars every time ! one exception :I don't have access to fresh clams so I buy canned ones. So now to the pantry and join my husband who chops for me : it will be ready when the first ones arrive this evening. Thanks Emeril !

    Absolutely delicious clam chowder and relatively quick and easy to make. The recipe calls for 2 pounds of clams, but I used 3 - 6.5oz cans of chopped clams(drained which seemed to be a good (and generous quantity and saved the difficulty of shucking and chopping.

    This is the 2nd time I have made this recipe and I used fresh cherrystone clams since it was only $1.49/lb. I got 8 lbs of clams and had plenty of clam juice & clams for the soup. It definitely tasted so much better than canned clams & juice. I am not a big fan of clam chowder because all the versions i have tasted were from different restaurants and they did not taste no where near this pot of soup. As long as I can find low priced fresh clam I will continue to put this recipe into use.

    Prep time was longer than stated but the chowder was great. Would leave out carrots next time and did use fat free half and half. Used a large can of sea clams with the juice and two bottles of clam juice. Great clam taste. The problem in restaurants is that they keep thickening the broth because they add more milk to strech it out, losing the clam taste. This recipe is the best. Can use less veggies if you want but don't short the clam broth

    Very good, easy recipe. I made some minor adjustments according to what I had in my kitchen. I had no bacon, and was trying to keep it on the lighter side. I had leftover ham in the fridge. I just chopped this up and used it in place of the bacon. Instead of the heavy cream, used fat free half and half. To thicken it up a little more I added one quarter cup of mashed potatoes flakes. It turned out good, tasted great!

    I felt it was overly clammy when I made it too. Possibly because I used canned clams and bottled clam juice. Maybe this made the difference as fresher is ALWAYS better. Also don't use dried thyme in this recipe, only fresh! This recipe also does have a lot going on in the vegetable department, I don't really think carrots have a place in clam chowder. Overall I really liked this dish, but I think I can get a more comforting flavor from a much simpler recipe and take a lot less prep time. Also if you're going to use canned clams to save time, I would sub 2 cups milk for 2 cups clam juice. The broth from the cans + 8oz bottle should do it. This should give you a good consistency and not make it into "chicken chowder". I even add some balsamic vinegar into mine sometimes for flavor. Sounds weird but it's good.

    I'm making it for New Years Eve, tonight. I hope it's as wonderful as all the other reviewers say. The only thing, at this point, I'd take issue with is the prep time. It took me over two hours (not 30 minutes to cut and dice all the ingredients. I did buy canned clams - whew! Now, just waiting for hubby to do the actual cooking and stirring. And for the guests to say, "Awe!"
