Only one word can be used to describe this recipe-FLAWLESS! I keep forgetting to buy the chocolate for it but it's flawless without it. Also, I've used it with cubed beef and with ground chili beef. Both ways taste great, it's just a matter of preference really. The people on here that say "it's too ethnic" or the cinnamon "tastes weird" have boring palates and need to branch out of their narrow frame of reference.

Great, spicy, flavorful chili recipe, the only thing I omitted was the second can of tomatoes, I just used one tin of crushed/diced to keep the liquid thicker. I'd never used beer before in chili & it made the recipe delicious & rich. I also loved the chunks of tender beef instead of using ground beef. Also, what I did differently was slow-cook it in the oven at 325 for 2 hours instead of cooking it on the hob - it came out perfect!

I had this at a dinner I went to Sunday and it was fabulous. I would recommend everyone try this at least once over your favorite recipe.
It's a winner in my book!!!!

An excellent recipe. I omit the chocolate and cinnamon. For me, cinnamon is more for a Greek-based chili. And bakerbychoice....good for you. Packaged chili seasoning is NASTY ! You really don't need the masa harina, either IMO.

Damn, I mean Bam, this chili is good. I used ground beef instead of chunk meat. My kids and I like to eat it with Fritos and hot dogs too. The second time I made this was much better than the first. I used less cinnamon than called for the second time around, it was perfect. I will never use packaged chili seasoning again. Emeril, Your chili Rocks...

This was pretty good. I left out the masa harina and added roasted poblano and roasted green peppers. I also cooked it for nearly 4 hours to make sure the beef was extremely tender. The sauce was excellent. Great recipe Emeril.
