Ingredients

  • 1/4 cup honey
  • 1/4 cup soy sauce
  • 4 teaspoons sesame oil
  • 1 pound soba noodles, cooked until tender and refreshed in ice water
  • 1/2 cup thinly sliced green onions, cut on the bias
  • 1/2 cup bean sprouts
  • 1/2 cup thinly sliced carrots
  • 1/2 cup cucumber, peeled, seeded, and thinly sliced
  • 1 cup lightly crushed toasted cashews
  • 3 tablespoons chopped fresh cilantro
  • 2 tablespoons black sesame seeds

Directions

In a small bowl, whisk together honey, soy sauce and sesame oil. To the noodles, add green onions, bean sprouts, carrots, cucumber, cashews, cilantro, sesame seeds, and the soy mixture and mix thoroughly.

    After reading the reviews and those for Guy Fieri's Dang Cold Asian Noodle Salad I decided to combine the two recipes in one for the dressing. So I basically doubled the overall dressing and added 2 gloves of raw minced garlic and 1 teaspoon Dijon mustard so that when I immersion blended it the dressing would emulsify. Much better with both dressings combined - Emeril's lacked vinegar and was a bit too sweet. Guy's lacked sweetness and was a bit too vinegary. Best of both worlds when combined.

    I made this several times. Easy recipe. I used regular dry pasta. Thin long pasta seems to be the best. Used light soy sauce, honey, sesame oil & cilantro only. Omitted other ingredients.
    Definitely make it the night before. Serve Cold the next day. Great for the summer! Love it!
