I didn't like the donuts, they were to sticky to roll out or cut out.Yet when my mom decided to just fry them and make balls, they turned out really great.Especially when you fill em' with pudding or covered them in cinnimon-sugar.

So far. Haven't made the doughnuts yet, but from what I see-it's not good. The dough ball did not turn out to be the way it is described. Like others, had to add flour to get it at least thick enough to handle. Tried to minimize the flour. Appears the recipe is wrong. Maybe 6 egg yolks and not whole eggs????? Obviously, a good chef is very disciplined, therefore, ole Emeril didn't make this or review it for accuracy before publishing. Not good-undermines credibility and reputation. BAM! It sucks!

I used 5 egg yolks + 1 whole egg (instead of 6 whole eggs, 1 tsp. vanilla extract, 1/4 C. brown rice syrup with the yeast, let the mixer run for a good 10 minutes after adding the flour, and then kneaded by hand with a small amount of flour until the dough could at least be transferred to a greased bowl without a spoon! VERY soft dough even without all the egg whites. After the first rise I rolled the dough out in thirds instead of working with the entire thing at once (that would be insane unless you have a HUGE work area. It made rich and creamy jelly doughnuts when it was all said and done.

I made these donuts twice. The first time I had to add about another 3 cups of flour, just to be able to handle the dough. But the final product had the texture of a 3 day-old baguette. The second time I made it, I did not add any extra flour, but had to pour the batter into molds in the oil. They turned out nice. I would love to see him make these and actually roll them.

This recipe seems so easy and good while watching it on tv. When I went to make it, the dough needed more flour and still didn't turn out that well. The pastry cream filling didn't turn out that well either. I wouldn't recommend this to anyone.
