Emeril's Dump Cake

Ingredients
  • 1 pound fresh raspberries
  • 1 pound fresh blueberries
  • 2 cups sugar, in all
  • 1/4 cup Chambord
  • 2 tablespoons cornstarch plus 2 tablespoons water to form a slurry
  • 4 egg yolks
  • 2 tablespoons melted butter
  • 1/4 cup scalded milk
  • 1/2 cup flour
  • 2 scoops vanilla bean ice cream
  • Fresh sprigs of mint
  • Powdered sugar in shaker
Directions

Preheat oven to 375 degrees. Grease a 13-inch by 9-inch baking pan. In a sauce pan, add the raspberries and blueberries. Using a fork, slightly macerate the berries. To the berries, add 1 cup sugar and the Chambord. Bring the mixture to a boil and reduce to a simmer. Whisk in the cornstarch slurry and continue to cook for about 3 to 4 minutes, just until the berries thicken. Remove from the heat and pour into the prepared pan. Using an electric mixer, whip the eggs until light in color and have a ribbon-like texture, about 3 minutes. With the mixer running, slowly add the sugar. Combine the milk and butter together. Stir the milk mixture into the whipped yolks. Fold the flour into the egg mixture. Pour the batter evenly over the berries. Run a knife through the batter to bring some of the liquid from the berries to the surface. Bake for 30 to 35 minutes, or until the batter is set and golden brown. Remove the cake from the oven and allow to cool. Spoon some of the cake into a shallow bowl, serve with the ice cream. Garnish with the fresh mint sprigs and powdered sugar.

    dump cherry or peach pie filling into a 9x13 greased pan. I use cooking spray. Sprinkle a regular size yellow cake mix on top. 1 stick butter chopped into pieces. Sprinkle on top. Sprinkle chopped nuts or a little sugar or both on top of that. Bake in a 350 degree oven for 30-35 minutes. Do not stir ingredients together. Haven't made this for quit some time now but a co-worker gave me this recipe just this morning.

    Uh.....Love you Emeril, but there is NO way you could actually prepare a REAL Dump Cake. That would be a contradiction of reality. The recipe you have here however is, as expected, a truly upscale version fit for royalty! How delicious....but we transgres...lets not dismiss how truly delicious a (real) Dump Cake is also........
     
     
    Dumpcake means that you just dump the ingredients together and bake. This is more work than a real dump cake. But still tasty.
    You're right. That's what my daughter and I said. There's only 2 steps to true dump cake. Dump everything into the pan and bake it. That's it.
