It is not only tasty, it is easy to kick it up a notch if you think you have been too timid with the flavourings. I make a whole Pint jar of the stuff and if it's going on the BBQ it is getting the "Esssense" My spice-timid children have come to enjoy a change of seasonings, and I gradually introduce a little Indian Curry to their palates. This is my &amp;#34;go to&amp;#34; seasoning for most everything and especially when I can&amp;#39;t think of anything to make. Fish, chicken, pork chops, hamburgers, mix it in butter to dip clams in, you name it! I&amp;#39;ve never bought the store version so I can&amp;#39;t compare to that but my family LOVES this! I eliminated the salt and added 1 more tablespoon of pepper after ruining a whole dinner of my Cajun Chicken Alfredo. I also only use a half teaspoon of oregano, and a half teaspoon of thyme too, otherwise for some reason it can have an odd, almost fishy taste. It&amp;#39;s a perfect blackening seasoning now also. We need to thank Emeril for giving us this recipe. I have used it for it must seem likes at least 10 years now. Since he first appeared and published it on his Food Network Show. You can buy it in mos supermarkets and I do when I am out of town on vacation, but this is just as good and usually make a triple batch at a time in a pint jar. I use this seasoning on hamburgers. My grandson calls it "magic dust". He will not eat a hamburger unless it has "magic dust" on it. It brings out the flavor of the meat so well. It works when used on meats for grilling. When I put the recipe together I multiply everything by 5 and put it in a special "magic dust" shaker. It is amazing how much we go through. I love this seasoning. I do not like vegetables so much, but when I put this seasoning on vegetables - I love them. It makes bland things taste so yummy. I sprinkle this stuff all over broccolli or peppers and onions or whatever vegetables I have and roast at 425 degrees for about 30 minutes, SO good! I love this recipe, but, after making it once again, I looked on Emeril's website, and the recipe is different, a larger quantity, but the ratios are not the same. Also, as far as the salt is concerned, I would keep it low, especially if you pre-salt your proteins. I find it amusing when someone complains about the recipe and makes changes to suit their needs, then berates another for doing the same thing! The salt is just like everything else, optional. If you don't like salt or you're on a low sodium/no added salt diet, then skip it. If you like salt and have no sodium restrictions, then by all means add it. That is a personal choice. I've tried it both ways and it doesn't make much difference to me. I love it! Oh and this is very important because one user said their 4-legged canine loves it too : NEVER FEED GARLIC OR ONION PRODUCTS TO YOUR DOG, EVER. I was first introduced to this seasoning by my son-in-law a few years back. It is almost a stand alone seasoning! Each different type of dish that you use it with is enhanced with the varied spices, I have used it with salads, macaroni and cheese, chicken, beef, fish, stew, roasts, sauces, omlets, steamed vegetables, fish, potatoes... too many to list! As almost every review says Essence is great on meat but it does so much more. As Emeril says... " I don't know where you get your bread crumbs... but where I get mine they don't come seasoned!". It is so close to the packaged blend Called Essence at a fraction of the cost. I slightly lowered the cayenne amount so that it pleased my taste. By making the essence yourself you can tweak it. If it's to hot then use less cayenne pepper if you like it hotter use more cayenne. Personally, I like just the way the recipe is given. My wife does not care for beef other than hamburger. A friend of ours gave us a young deer involved in a "road kill." The deer was still fresh as the woman who hit it was grieving by the side of the road.
