This is the most fantastic recipe ever. Emeril is always my go to recipe chef but this is over the top. It is very easy and worth the effort. Try it you'll love it. Thanks again Emeril

This is the best deep fried turkey recipe out there. I have been using this recipe for the past 5 years. The turkey is sweet a succulent, with a hint of spiciness. It does come out a little dark because of the sugars in the recipe, but that's the beauty of cajun cooking...It can be dark but not burned. After seasoning and just before frying, I dust the turkey with flour for added crispiness. The skin is the best part. It is crispy and spicy. Very tasty.

An absolute winner! We've made this bird twice for Thanksgiving now and both times it's come out wonderfully. Someone mentioned that the bird was black when they took it out of the oil - I'm pretty sure this is supposed to happen. Even though it looks totally black and burnt, the skin still tastes absolutely divine!

This was absolutely wonderful! I've made it a few times and actually have even baked the turkey in the oven instead of frying it and it still came out fabulous! Would be nice though to have the ability to have the recipe for just one turkey because I never do two and most of the marinade ends up going to waste...

I've used this recipe every year for the past 4 years for our Thanksgiving feast. It's yummy the only problem I've experienced is that the cider, beer, sugar combo makes the turkey darken too fast so I've always start in the deep fryer but end up putting the bird in the oven to finish it off.
