I've been making this recipe for over 3 years. Friends & family ask us all year long when the next turkey will be made. The marinade/injection sauce gives the turkey great flavor & the deep frying make the turkey VERY moist. We rarely have leftovers with this recipe!
The only difficulty we have is getting the spices through the injector holes (it gets clogged frequently. I prefer to make the marinade ahead of time & let the seasonings blend with the liquids before injecting. Then strain the marinade & inject just the liquid.
If you do have left overs, the Turkey Chili recipe from Episode#CL9420 is FABULOUS with this turkey.

I am located in Canada and used this recipe for our Thanksgiving dinner this year. This was my very first attempt to fry a turkey ever!! I only used one turkey and had just divided the recipe in half for the one bird. It was the best piece of turkey I had ever eaten and if you are tired of the same ol roasted and usually dry turkey I highly recommend this recipe!! The southern twist is unbelieveable!!

I have no doubts that if you use this recipe you will have no leftover turkey. In fact, you will have others come to you and ask if you'll cook theirs next year. Every year I have to cook at least one more turkey than the year before.

I have done lots of fried turkeys and this recipe is a good one BUT ... there is a big problem with the instructions about the oil in the pot. If the pot is filled with oil 3/4 full and heated to temp, it will expand by about 5 % and it will OVERFLOW when the 15-lb. turkey is put in. Everyone who fries turkeys knows the method for determining the amount of oil to use for a SPECIFIC turkey. I am surprised that Emeril did not include this.

OMG!! I just made this for dinner tonight.. It was AWESOME!!! Juiciest turkey ever! If I didn't have a thermometer I would have thought the turkey was under done.
BTW - I wasn't able to find any Peanut oil because we were delayed in making our T-day dinner, so I used corn oil and it worked just fine!

We fried 2 turkeys for Thanksgiving yesterday and I decided to try 2 different recipes. Both recipes came from this website and both had a 5 star rating. The first one was very good. We were very happy with it. It was the best turkey we had ever eaten. Then this one was done and WOW!!! I will never bake a turkey again and this is my recipe from now on. Absolutely Wonderful!!!!!!!
