This was an excellent recipe. The turkey was juicy and very flavorful. We did a 13lb turkey and halved the ingredients. The only thing is to watch the amount of salt, we used about 3-4 tbsp of salt total and marinated the turkey overnight. Everyone loved the flavor and said it was the best they had. We would definitely recommend this recipe.

I had always heard of fried turkey before, my husband and I tried this recipe with a group of friends and it was a big hit. Shortly afterward we were invited to dinner where fried turkey was the main course it didn't compare to this recipe. Thanks Emeril for sharing!!

This makes an excellent fried turkey, it's tender, juicy, and the flavoring is amazing. The one problem with the recipie is actually injecting it into the turkey. We've had syringes get seasonings stuck in them, clogging it. If that happens, use an awl (make sure it's clean and sanitary to make the punctures and pour the marinate in.

We have been deep frying turkeys for several years and have used Emeril's recipe every time. We just use a little less of the really spicey stuff and it is phenomenal! Everyone always wants us to deep fry a turkey & invite them over! My 80 year old grandmother said it was the best turkey she has ever had in her life!

We tried this for our very first fried turkey thanksgiving. We fried a 20 lb. turkey and it came out terrific. Our turkey was naked as we loved the fried skin. Thanks

My family and friends ask me every year around Thanksgiving, "Are you doing the Fried Turkey for Thanksgiving or Christmas?" Everyone raves over it every year. They seem to always forget just how good this recipe is! Some year I'll get around to doing it for both holidays!

This was our first year to fry a turkey, and we used this recipe. It was a big hit! Just a side note....made Alton Brown's cranberry dipping sauce to go with the turkey. YUM!
