I prepared and fried our Thanksgiving Turkey this year for the family, and was amazed when the rub called for 1 CUP, yes 1 CUP of Salt, I checked that and double checked, and to my speculation, it was way TOO MUCH SALT for our taste! Granted it was for two birds in the recipe, but I haved it and rub it on our one 14lb Turkey. I will make this again, for Christmas Eve, but will not use as much salt. In all other regards, the bird came out very juicy and tasty and I would recommend the recipe, just be weary of the salt if you're not use to eating lots of salted foods.

I followed all the instructions that Emeril laid out in the program on all the safety procedures as wells as the marinade and frying. This was the best turkey I have every had. It went smoothly and the meat was so flavorful and juicy. I will do this every holiday!!!

We have used this recipie for the last three years at Thanksgiving. I usually do two turkeys, one roasted and one deep fried. I very seldom if ever have left overs of the Emeril deep fried turkey. The men especially like it, so I've delegated the cooking of that turkey to them which also lessens my load on Thanksgiving. Two "birds" with one stone as it were.
We love this turkey recipie in Ohio.

This Thanksgiving will be the fifth year we've fried a turkey - and we always use this recipe. It is the BEST!
A tip: After frying the turkey, take some fresh baby spinach leaves and fry them in the oil for about a minute. Remove from oil, put on paper towel lined plate to drain and sprinkle with salt! Delicious!

Have prepared this recipe for several years and it always gets rave reviews from all. The only problem with it is the amount of time to cleanup the mess form cooking...not to mention disposal of the oil.
Bottom line I guess it is worth the trouble as friends and family beg for the fried turkey each Thanksgiving. The tradition continues.
