Ingredients
- 16 large, head on scampi
- Creole seasoning
- 3 tablespoons olive oil
For the sauce:
- 2 tablespoons garlic
- 1 tablespoon parsley
- 2 tablespoons capers
- 1 tablespoon olive oil
- 1/4 cup cold butter
- Fresh ground black pepper
Directions
Season the scampi with Creole seasoning. Add olive oil to a saute pan and heat. When oil is hot, add seasoned scampi and saute for 5 minutes, or until scampi is fully cooked. Remove scampi from the saute pan and set aside. To the saute pan, add the garlic and saute for 1 minute. Add the parsley and capers. Add the additional olive oil and saute for 1 minute. Remove the pan from the heat and whisk in the cold butter. Season with pepper. Pour the sauce over the scampi. To serve: Spoon the beans into the center of 4 plates. Surround the beans with 4 scampi and top with the caper

I've read and re-read the recipe, which states: "To serve: Spoon the beans into"...etc.. and there are no beans in the recipe. I can't seem to figure out if it's a typo or what. I love all of Emeril's recipes and would also like to make this one. Thanks for your great website! Lori Jones

this was a great new twist for an old stand-by. My husband & I both loved this, it has a nice kick.

My husband has never had scampi before, and he loved this recipe. Great for that left over shrimp from the party.
