    Nigella's recipe uses bacon with no sauce over and it is good.This sounds better.Same principal.Rather than try ti peel a sofboiled egg I will poach and then shock the eggs.Not as pretty but so much easier.Just trim whites.Emeril's recipes can be complicated but they are generally very good

    my first try with any meatloaf ever and both me and my husband loved it so much!! so yummy and soo juicy and even the eggs were fantastic...they just stayed medium inside. I love all your recipes and this one was no exception Emeril! thank you :

    I could not believe it when I found this recipe on the food network
    My big Sis made this for our family of nine way back in the forties less the chilli sauce she used ketchup instead. When I made it all the beautiful memories of home came flowing back to me. It was just as delicious as I remembered from my childhood.

    Wow!! My friend passed this recipe on since he grew up on Meatloaf with an egg in the middle. I felt like I was being dared to try it!!! My family loved it, especially the 1 yr old! Only thing I would adjust is instead of Soft Boiling the Egg I would Hard Boil. I also agree you need to read the recipe closely because I thought the Chili Sauce was going into the mix vs. on top.

    I like the recipe, but the dirctions are misleading. The direction tells you to add all the ingridents but the egg, chesse, and bacon. Then later in the directions it tell you to add the chili sauce to the top of the meat loaf.

    The direction didn't tell a person not to add the chili sauce to the meat loaf. during the mixing of the ingridents The recipe turned out okay, but the directions are misleading.. Foodnetwork please make the changes to the recipe...

    While hubby in college many, many, years ago, we vets lived in converted army barracks and survivied on $120 a month. All the families bought the 3lbs for $1.00 hamburg and exchanged hamburg recipies. Combined we must have had a couple hundred recipies. Many meatloaf recipies but not this one. I used ground chuck, and fresh ground pork for this. And drained the bacon thoroughly on paper towel, had no grease problem. This was truely a treat, and the soft boiled egg in the middle, sure does make a real Italian cook out of you. kaddy

    This is not your mother's meatloaf. And that's a good thing! So many flavors.
    This meatloaf was a HIT! I made one for my wife, then for my mother and father, everyone loved it! As far as the grease everyone comments on. . .drain it off, I did and it didn't cause me to sweat or pull a muscle. If you are a health nut and can't stand the sight of grease then you probably don't have enough taste buds to fully enjoy this dish anyway. The only things I changed in the recipe were; added more bacon, cheese and used hard-boiled eggs and a pinch of Accent (MSG. If you aren't allergic to MSG it's a magical additive! Make this dish and I promise your family will look at meatloaf differently. It's so good, and so easy.
