Make these even better by frying in pure beef lard. That's what used to make MacDonalds fries taste so special. I get mine in 1/2 gal. tubs from a local butcher. Strain through cheese cloth and refrigerate to use again.

This is my second time making french fries and it turned out much better this time also because i have a thermometer now. Controlling the temperature was the hardest part. A question, are you allowed to reuse the frying oil? And thanks for the directions!

These are sensational! Best fries I've ever had. Simple and easy to make. I added Paula's house seasoning and they were marvelous!

These were great. Haven't done fries in a long time because they never really turned out good but these are insane. Well worth the extra effort to cook them twice and prep the night before.
