Adult version of this recipe - use regular Essence, and add one small or one half large, seeded jalepeno, chopped. Very tasty. Coworkers devoured my leftovers.

I made this for supper tonight, & it was excellent! My very picky 3 year old son helped make the Baby Bam, & proclaimed "yum" when he ate his. Even my 16 month old ate this. My husband & I added the salsa & decided we would definitely make this again. I do recommend making the Baby Bam, even though it makes a lot & you only use 1/2 teaspoon. It would be a great rub for fish before grilling!

I love this recipe and use it frequently (about once a week for making lunches to take to work, in place of sausage I have been using the mexican sausage known as chorizo to add spice and flavor. It works great and adds just the right hint of flavor. As another ingredient to make the right amount of burritos, I make a batch of hash browns, either from scratch or store bought. Hash browns o'brien works great, but the thin sliced work just fine.

Had a family drop in unannounced and threw this together for breakfast. Just tripled the ingrediants and they absolutly loved it.

This recipe is simple yet oh so delicious! When my family suggested I try something different for Sunday breakfast, I never in my wildest imagination thought they would pick breakfast burritos. The ingredients are simple, the prep time is quick and the result is a gastric delight! My beloved is Mexican, and even he thought I sent out for them!! He's not a spice lover, but Emeril's spices tease the palate of my hot tamale! Enjoy!
