This was the first time I tried to make risotto. I followed the recipe exactly and it turned out perfect!!! We all loved it. It took the exact amount of time as the recipe stated. My shoulder is a little tired from all the stirring but WELL WORTH IT!

We had tried a boxed risotto and didnt like it at all. I though I'd give this a try. and it was YUMMY! everyone liked it. i would definitely make this again.

This was my first time making risotto and i thought i would try this recipe. The overall flavor is good but the reason for this bad review is all about time. I followed the directions exactly and i ended up atanding over the stove stirring the risotto for 30 min and it still was not cooked! Turns out we had to put a lid on it to even get the rice to cook. I am very disappointed. I want Emeril to prove to me that it only takes 18 min to cook. FAIL!

This was the best risoto I have tasted to date. The next day I made Aracini Balls with the leftovers. It was absolutely delicious.

Loved this dish, but I think next time I might pre-cook the rice because it was still a bit crunchy, but still an a wonderful flavor

I have to overlook the fact that my rice was some that was left from about a year ago when I had previously tried a risotto recipe. The rice still had quite a bite, but I assume this was because of this, because I even cooked it a little longer than stated. Other than that...this was fantastic. Nice blend of flavors, between the onion/garlic, three cheeses and the chives. Will definitely make again...this time with fresh new rice :

This recipe was DELICOUS!!!!!!!!!!! Make it as written but if you want a tip, add some riccotta on the top and eat it - totally makes the dish! It was fabulous my roommate ate it for weeks!

I followed this recipe exactley and it came out wonderful. The chives and the parmesan give a nice kick. I recently returned from Italy and this recipe is comparable to the risotto's I tried out there. I made this dish with Salmon one evening and baked chicken another and it was perfect with both. Highly recommended!
