I made this buttercream icing and found that the instructions were welled versed and easy to follow. I had the 5 pounds of butter warming on the counter and as I started to whip it into the merangue mixture I quickly realized that it was becoming far to buttery. I was 6 cubes in at that point. My daughter had the idea to check comments and saw almost immediately the 'this suck's' comment. So glad she had the idea to look! The buttercream at that point was for a anniversary cake due that afternoon so I worked with it despite the extra cube of butter. The icing was wonderful to work with and other than being a tad buttery tasted great! I am preparing to tackle it again this time using 5 STICKS of butter!

This is the perfect example of sponge cake and of italian meringue buttercream! The other reviewers should do a little research before they make something that will not be to thier liking. The look of the cake is not really my taste, but no one said I had to decorate the same way!

I think this is one of the ugliest cakes I have ever seen. Frankly, I am shocked that Foodnetwork even posted this pic of a cake, then 5 POUNDS of butter...comon. Does Emeril even know that his name is attached to this thing??

I am pissed, I had to thow away at least $20.00 worth of ingredients and 4 hours of my time, the recipie for the BUTTERCREAM calls for 5 POUNDS of butter, I think they meant to type 5 STICKS when this recipie was typed up for posting. Obviously food network isn't reading there reviews. This needs to be corrected, you're wasting several peoples time and money. This makes me wonder if the good reviews below are fake...

I found the instructions for preparing the buttercream more detailed than some recipes.

The icing tasted like pure butter. Might taste better on corn instead of a cake.
