I made this recipe for New Years Day this year and it was a hit!!! I'm not a big fan of sauerkraut, but this is great! I omitted the juniper berries as well. I thought adding grated potatoes sounded strange, but it was reallllly good and easy!!! Thanks Emeril!

I HATE Sauerkraut, but it is a traditional dish for my family to eat on New Year's Day. This is the first time in my life that I have actually liked a sauerkraut dish. I followed the recipe to a T, except for the Juniper Berries, which I could not find. This dish is easy, fast and tastey. Thank you Emeril for making a traditional dish an enjoyable dish. Now if you could only do something about Black Eyed Peas :

I make this every New Year and several times throughout the year. I have omitted the berries and in a pinch substituted a cup of all natural, no sugar added applesauce for the Granny Smith apple which i forgot to buy at the supermarket. It was just as good!

It was always a favorite of mine but she didn't grate the potatoes. She used plain boiled potatoes mashed up lumpy.

The complexity of flavors in this recipe is delicious and has a wonderful texture. I didn't have Granny Smith apples so I used Red Delicious apples and found it to be a tinge sweet which, balances the saltiness of the bacon and the tartness of the sauerkraut. I also omitted the juniper berries. My husband says, "Vinegary but not overpowering - a nice compliment to schnitzel and spaetzle." One tip which isn't said in the recipe...drain and press the sauerkraut well so it can absorb the chicken broth while cooking.
