Nice and easy recipe except I fold the tortilla after it starts to brown but not stiffen. It's easier to flip with a regular spatula. I also shred the chicken in a food processor (3 or 4 pulses. I can really stretch the chicken that way. Also a fruit salsa works, mango papaya pineapple with the jalapenos, red onion, celantro, oil and vinegar salt and pepper with a pinch of sugar is pretty tasty.

i wasn't to fond of this recipe. maybe cause i like meat and there is none in this dish. next time i'll make it w/ chicken in side the quesadilla but the salsa i think tastes better w/cilantro in it. the holy guacamole i haven't tried yet.

This is a simple and delicious quick meal. I used store bought salsa & guacamole dip b'cuz I had these on hand. Next time I'll try Emeril's recipe instead. YUMMY!
