This could be made various ways, I have done it this way--it's also done this way at PF Changs. I like to use the more "greenish-yellow" bananas. When Emeril says firm, he means firm, it'll hold better after frying. You may serve with Vanilla Bean Ice Cream. I am second generation Filipino--I think this recipe is just as good as it was at home!

i think its ok but not the one im used to. the secret is the banana should be coated w sugar then wrapped. sometimes for added flavor - jackfruit is added, just a tiny bit. :

Cupcakelover007's recipe is correct and more traditional. There's another type of cooking bananas sold in Filipino stores that is used if you can get it. At least put brown sugar on the bananas Emeril. I like a little cinnamon with the sugar also. The key to turon is having the sugar melt around the banana and as it leaks out in the oil, some of the caramelized sugar sticks to the outside of the roll.

6 RIPE Banana (Plantains
1/2 Cup of Brown sugar
1/2 Cup of drained canned jackfruit (Optional found in Asian/Hispanic markets
1 package of spring roll wrappers (Filipino lumpia wrappers
Oil (enough for deep frying
Cut all bananas in half, and slice jackfruit in long thin strips. Place half a banana on the wrapper, place jackfruit on top and sprinkles with brown sugar on top (depending on how sweet you want it. Roll into the shape of an egg roll. Seal with water or egg white. Fry in med - high heat until brown and the wrapper is crisp. Place on a wax paper to cool...and then enjoy!

I had turon over in the Philippines and it tasted so much better than Emerils recipe. Hey Emeril ? Go to the Philippines ! You might learn something.

i agree with the other reviewers, the traditional "turon" is sprinkled with sugar inside before wrapping the bananas(you may also add jackfruit and then frying them also with the additional sprinkling of either white or brown sugar.

I am married to a filipino and they left out a few ingredients. These are called Taron and missing the jackfruit and granulized sugar inside as well as sprinkled on the outside once fried. these were just ok I will continue with the recipe I was taught my by mother in law and lola Nelly of my hubby

i'm filipino and as the other reviewer said...you slice the banana lengthwise....put a piece or 2 of jackfruit..roll the banana in brown sugar OR put some brown sugar inside the lumpia wrapper w/ the jackfruit and banana and then deep fry. no chocolate at all...except maybe a little bit of sugar if you want.

The recipe also calls for a piece of jackfruit (also available in most Asian specialty groceries, in the freezer section to be placed on top of the PLANTAIN banana slice then rolled. Then, the wrapped banana and jackfruit is rolled in either granulated white sugar, or brown sugar, then dropped in the hot oil to fry.
