- 4 ounces whiting
- Salt and freshly ground black pepper
- Flour, as needed
- 1 egg, beaten
- Cornmeal, as needed
- Oil, for frying
- Mayonnaise, to taste
- 1 beef frank, cooked, cut in 1/2 lengthwise
- 1 onion, sliced thin and sauteed
- Baby spinach, as needed
- 1 hard roll
- Crushed red pepper, to taste
Season the fish with salt and pepper, to taste. Dust the fish with flour, then dip in the egg and finally in the cornmeal.
Pour enough oil into a skillet to come halfway up the fish. Heat the oil and add the fish. As soon as the first side is browned, flip and brown the other side. Remove to paper towels.
