Easy - so very easy to make! The sherry lends itself to the natural sweetness of the onions as they cook down. Serve with a great bread on the side! Great dish for in front of the TV or a sit-down dinner. Thanks, Emeril!

This is a very delicious version- I was surprised! It is one of the best french onion soups I've had, and this one is quite comparable to those I've tasted in restaurants. Split the recipe in half, like I did, and it's a hearty size for one person. I used beef broth instead of the veal stock, and a lightly toasted slice of white bread instead of the croutons.

We made this recipe last night and it was simple and elegant. A wonderful taste, better than some restaurants I've tried. Only thing we did different was to use croutons instead of French Bread.

I have traveled to many cities in the world. One of my pet hobbies is looking for good French Onion Soup while on my visits. This receipe is one of the better ones and comparable to the French Onion Soup served at the Derby East Restuarant in Monrovia California.
