You can create up to five timers

Ingredients

  • 3 cups chopped vine-ripened tomatoes
  • 1 cup small diced red onions
  • 1 large fresh jalapeno, seeded and cut into small dice
  • 1/2 cup loosely packed chopped fresh cilantro leaves
  • 1 tablespoon chopped fresh parsley leaves
  • 1 tablespoon chopped garlic
  • 2 medium oranges, skin and pith remove and segmented
  • Salt
  • Freshly ground black pepper
  • 4 tablespoons fresh lime juice
  • 1 tablespoon extra-virgin olive oil

Directions

Combine all of the ingredients in a mixing bowl and toss well. Season with salt and pepper. Allow the salad to sit for 15 minutes before serving.

    I was a little unsure about making this salsa because of the two main ingredients, tomato and orange, but I figured it was good because Emeril created it. When I revealed my creation at a friend's bbq, everyone kind of looked at the salsa with skepticism. One person decided to try a bite to be nice and then walked away raving about the salsa. By the end of the night, everything had been devoured and everyone kept asking me for the recipe. Thanks Emeril!

    No need to wait till summer for a
    "tropical party." This salsa is perfect
    any time of the year and loaded with vitamins - tomatoes and oranges - served with corn chips - it's also very healthy! I made this last night and the family loved it. Thanks! for another great recipe.
